Patra nu Shaag
Ingredients:
1. Patranapaan - 1 judi (6 -8 leaves)
2. 6 hrs Soaked chana dal - 1/2 cup
3. White radish(muli) - 1 chopped lengthwise
4. Fresh Coconut - 1/2 partly screped and partly chopped into small pieces
5. Groundnuts soaked for 1 hr. - 1/2 cup
6. Jaggery - 1/2 cup
7. Red chilli powder - 1tsp
8. Turmeric powder - 1tsp
9. Cumin - 1/2 tsp
10. Hing/asafoetida - 1/2 tsp
11. Tamarind pulp - 1/4th cup
12. Water - 2 cups
13. Oil - 3 tsps
14. Mustard seeds - 1/2 tsp
15. Besan - 3 tsps
16. Chopped green chillies - 2
17. Pepper powder- 1/2 tsp
18. goda masala 1/2tsp
METHOD:
1. Wash and cut the stems of the patra leaves. Peel the outer covering of the stems and the leaves from the back side.
2. Chop the leaves and thd stems.
3. Boil the chana dal, Groundnuts and chopped coconut and keep aside.
4. Heat the pressure cooker take 2 tsps oil and add hing/Asafoetida to it. In 2 seconds add the chopped patra and the stems. And cook for 3 whistles. Let it cool.
5. Remove from the cooker and blend it with the handmixercoarsly.
6. Heat 2 tsps oil inkadai
7. Add mustard seeds and let them crackle. Then add 2 pinches hing, jeera, red chilli powder,turmeric powder, pepper powder and chopped green chillies and then add the blended patra mixture.
8. Add salt according to taste and add goda masala. Then add the boiled Groundnuts, coconut and chana dal to it.
9. Add the tamarind pulp and jaggery and salt if required.
10. Grind the remaining coconut and besan using a little water and add this to the patra vegetable. Let it simmer for 6 to 8 mins . The vegetable will thicken a little thats when its ready.
11. Plate in a serving bowl and serve hot with rotis or puri or rice.
Tamarind is to be added the stems have to be peeled properly to remove the itching property the patra vegetable has.
